In a large pot, heat Avocado Oil over medium heat. Add Onion and Sweet Potato and sauté for 10 minutes. Add Bell Pepper and sauté 5 minutes more. Add Tuscan Kale and sauté until wilted. Add Curry Simmer Sauce, Coconut Milk and ½ cup water. Reduce heat and simmer 30-35 minutes, stirring occasionally, until Sweet Potatoes are soft. Season with Salt and Pepper to taste. Spoon over a bed of cooked grains or a bowl of fresh greens and serve immediately.
