We are fond of all sorts of cheese. You can tell it’s true from a quick survey of the cheese case in any one of our stores. While we readily appreciate (and carry) cheeses with sharper, funkier profiles, we are just as enamored with the more delicate, creamy curds. Our June Spotlight Cheese happens to be of the most delicate, creamy kind.
Fromager d’Affinois [Fro-mah-ZHAY dah-fee-NWAH] Garlic & Herbs Cheese is a soft-ripened cheese that benefits from the special cheese-making method pioneered by Jean-Claude Guilloteau. Since 1981, his family-owned fromagerie near Lyon, France has been using an ultrafiltration technique to create some of the most creamy, delectable cheeses available. This technique forces milk through a micro-filter to eliminate the water, while allowing protein, calcium, and other important nutrients to remain. Ultrafiltration also retains more milk-fat, resulting in ultra-creamy cheese!
Our supplier—that very same fromagerie—combines garlic and an herb blend (chives, parsley, chervil) with the concentrated curds, adding herbaceous goodness to this “double-cream” (officially), acutely delicate, Brie-like cheese. Also Brie-like, is its edible rind. This spreadable cheese eats especially well with crusty bread, crackers, and fruit, and it pairs well with just about any white wine.
