Aunt Sally sure knew how to make a pie. And that’s good because she was the household cook for a Bahamian millionaire with a sweet tooth. The pie that she made for William Curry and his Key West estate in the late 19th century is today an icon of Floridian food and a celebrated American classic. Trader Joe’s now reveals our own tart and tasty version of Key Lime Pie—just in time for those hot summer evenings when you don’t want to bake, but still want to eat like you did.
Backing up just a bit… it’s not certain Aunt Sally invented Key Lime Pie—only that she made it famous. It is likely, however, that this pie populizer (whose last name we don’t even know) learned the simple recipe from local sponge fishermen who would spend extended periods at sea on small boats, where fresh foodstuffs were in short supply. What they may have had at their disposal includes indigenous citrus, eggs, and sweetened, condensed milk in a can (the 1856 invention of Gail Borden). Turns out, that’s a recipe for pie!
The key to our pie is its smooth (but not gelatinous) custard, with a creaminess that easily conveys a bright, citrusy tartness, balanced with just enough sweet. We use the juice of actual Key Limes (not Persians)—call us purists. The authentic yellow hue comes from egg yolks—no green food coloring here! The custard is cradled in a traditional crushed graham cracker-butter-sugar crust that looks and tastes like homemade. After just two hours thawing in the fridge, it’s ready to eat, and once defrosted, you can enjoy it for up to two days. Gussy it up with some fresh lime twists and a little canned whipped cream. Simplicity is the key!
