Sometimes, you just have to go to the source. Since 2012, we’ve been selling Vegetable Pakoras as one of the Indian offerings in our frozen case. We were fine with this Canadian-made version—that is, until we traveled to the Asian subcontinent ourselves and had some of Mother India’s pakoras.
Tasting ours next to theirs, we found our Pakoras (peh-KOR-ahs) were more chewy and filled with less-firm vegetables. Perspective is everything. This culinary epiphany called for a rework, resulting in our new and improved Vegetable Pakoras.
Our Indian supplier combines a traditional batter made of gram flour (aka ground chickpeas) with hearty chunks of potato and cauliflower (which we found to be omnipresent in authentic pakoras), spinach, red onion, pomegranate seeds, and savory spices. These veggie lumps (pakora literally means “little cooked lumps”) are then fried in palm oil until crisp and golden. The crisp bite yields to a soft center, rich with vegetable flavor and Indian spices.
We’ve included a classic, sweet-tart Tamarind Chutney for dipping, but whether you dip them or not, you’ll find Trader Joe’s Vegetable Pakoras to be a satisfying savory snack. Serve them as an appetizer for one of our center-of-the-plate Indian dishes, such as our Lamb Vindaloo. Or, keep it vegetarian by pairing these Pakoras with TJ’s Vegan Tikka Masala.
