The exact origins of poutine (that's pooh-teen) are hard to pin down. We know it comes from rural Quebec, and we know it was first served sometime in the mid 20th century. Our Poutine is a mess of good things. Following Canadian tradition, it's a combination of fries, cheese curds, and gravy. It begins with fries made from Challenger Gold potatoes grown in the Pacific Northwest. These potatoes are yellow, with a slightly sweet flavor, and bake in your oven to a satisfyingly crispness. They're joined in the bag by a separate packet of Wisconsin cheese curds, the fresh cheese that results from removing most of the liquid whey at the beginning of the cheese making process. In a third packet is a rich brown gravy. Bake the fries, thaw the cheese curds, and heat the gravy. Top the fries with the curds, and pour the gravy on top. Sure, it's a mess, but in the best possible way. It's comfort food, and sometimes that's exactly what the doctor ordered. Doctor Joe, that is.
