Pizzas have come a long way since the days when they were simply vessels for tomato sauce and melted cheese. We have no problem with tomato sauce and melted cheese, mind you. In fact, nothing could be further from the truth - we are true believers in the eternal goodness of the traditional pizza. However… (you knew there had to be a however) we are equally fond of not-so-traditional pizza, pizza with pizzazz, pizza that defies classic customs and yet delivers tremendously pleasing results. In other words, pizza with out-of-the-ordinary toppings are delicious.
And so we offer, in the category of "out-of-the-ordinary" toppings, Trader Joe's Kaleidoscope Chard. Scientifically known as beta vulgaris, chard is native to the Mediterranean region and has been enjoyed (and written about) for more than six thousand years (Aristotle was an early adopter). Kaleidoscope Chard is a tall, leafy green whose stalks come in a virtual rainbow of colors: pink, red orange, yellow, green, white. It's pretty, for sure, and loaded with vitamins A & C, calcium, iron, fiber, and folic acid. And as luck would have it, it's surprisingly satisfying on a pizza. You can add it straight from the bag atop any pizza at all, or sauté it first in a little olive oil, then pair it with Crumbled Blue Cheese for a slightly bitter, wonderfully tangy take on this humble pie.
