Corn & Chile Salsa

Must salsa contain tomatoes? We say no. In truth, salsa is simply a Spanish word that means "sauce", and we’'e familiar with plenty of sauces that have never met a tomato. Now, we have nothing against tomato-based salsas. Truthfully, we love tomato-based salsas. However, we're open-minded enough to make room in our kitchens for all kinds of salsas, including the impressively tomato-less Trader Joe's Corn and Chile Salsa - free of tomatoes, yes, though bursting with its own distinctive, bright, vivid flavors.
This is uniquely flavored, with a base of sweet corn, blended with finely diced red bell peppers, onions, jalapeño peppers, and a bit of sugar. By "a base of sweet corn", we mean, "lots and lots of sweet corn". As in, 1.8 ears of corn in every jar - we have taken them off their cobs to make them fit. (We've sold enough of this salsa that over time, this has meant more than nine million ears of corn.) It has a little kick, but it's not overpoweringly hot. Pile it into tacos or burritos, scoop it up with chips (our Veggie & Flaxseed Chips serve as a colorful counterpart), spoon it over salads or chili, fold it into scrambled eggs, serve it as a side dish with grilled chicken or fish, or even use it in place of relish on a hot dog.
