To the uninitiated, it may seem strange that cheese would be aged in caves. In the world of aged cheese, though, caves are very good things. Legend has it that the world's first blue cheese was developed in the natural caves of France, where temperature and humidity conditions were ideal for this purpose. Trader Joe's Cave Aged Blue Cheese continues this tradition in sandstone caves in Minnesota, where blue cheese has been crafted for more than 70 years - ours is aged for about 75 days.
TJ's Cave Aged Blue Cheese is a complex cheese whose flavor is the result of the dedication of true artisan cheesemakers. It is premium, handmade cheese with deep bluish-green veins and strong, savory flavor. This is a terrific cheese to serve cold, crumbled atop a salad or with sliced fruit. To really allow the rich flavors and creamy texture to shine, bring it to room temperature - it's delicious with crackers or melted over a steak or burger. And, of course, its bold flavors mingle beautifully with robust red wines like Cabernet Sauvignon. Because it melts so well, it's a great cheese for sauces - potatoes au gratin bleu anyone?
