The olives on these California ranches are sustainably grown on trellises like wine grapes, and are 100% drip irrigated. This reduces water usage and also serves to enhance & intensify the natural flavor of the olives, and subsequently, the flavor of the oil. The oil is unfiltered, so some fruit sediment may settle at the bottom of the bottle. You can certainly use it for cooking, but its flavor is so vibrant it virtually screams to be used in fresh fashions.
