Bulgur Fattoush Salad

Fattoush (derived from Arabic) literally means "crumbs". This is not a "crumb" salad. It is a grain salad (see Cranberry Almond Grain Medley for more grain salad goodness) with bulgur as its base. Bulgur is the groats, or hulled kernels, of wheat. It's a high-protein, fiber-rich, whole grain that's common in Middle Eastern dishes. Here, it's combined with Roma tomatoes, cucumber, mint, and goat cheese, then tossed with a Pomegranate vinaigrette. It has a confetti-like appearance, and confetti could be mistaken, in some instances, for "crumbs", so it all does kind of make perfect sense, doesn't it?
Trader Joe's Bulgur Fattoush Salad makes a delicious lunch - it's light-tasting and will leave you satisfied but not stuffed. It's also an excellent side dish with marinated & grilled chicken or fish, or in place of a garden salad with a burger.
