These Muffins are made exclusively for us, using a blend of rice flour, potato starch, soy flour, and almond meal in place of wheat flour. We found a phenomenal gluten free bakery who is supplying these Muffins for our bakery section across the country - they're baked fresh, then frozen until they reach our stores, where we thaw them. They're light and cake-y, delightfully moist. That moist texture is the result of a couple of secret (and surprising) ingredients: applesauce and mayonnaise. They taste neither applesauce-y nor mayonnaise-y; just super moist. They're also loaded with wild blueberries, bursting with big blueberry flavor.
