Joining the fully cooked brown rice and white jasmine rice you'll find in Trader Joe's freezers is Trader Joe's Sprouted Red Jasmine Rice. This Red Rice from Thailand gets its color from antioxidant pigments called anthocyanins. For this preparation, only the outer hull of the rice is removed, leaving the bran layer, and preserving the majority of the rice's nutritional value. Further upping the nutritional ante, the rice has been allowed to sprout, or germinate, increasing the levels of beneficial amino acids. The most important of these amino acids is called gamma aminobutyric acid, or GABA—the Japanese refer to it as hatsuga genmai—and many refer to this type of sprouted rice as GABA rice.
