The Eggplant you'll find at Trader Joe's are deep, dark, glossy purple nightshades, oval in shape and particularly meaty. They're about 20 ounces each (give or take), big enough to make a side dish for a family meal. Combine with Tri Color Peppers, Tomatoes on the Vine, onions, and zucchini to make ratatouille. They're also the ideal size for eggplant Parmesan, and sliced into rounds and brushed with olive oil, they take on a wonderfully smoky flavor when grilled. (If you're cooking them with oil, we suggest salting and draining them first, then patting the salt off once much of the air and water has escaped the Eggplant - this will keep it from absorbing too much oil during cooking.) Or slice them lengthwise, scoop out the inside, stuff them with any number of fillings, and bake to perfection.
