The name of this salad almost says it all.  Lemon-seasoned white meat chicken is teamed with peppery arugula.  But there's more!  "More", in this case, is a Moroccan-inspired salad made with couscous and red quinoa, red bell pepper, carrots, parsley, mint, smoked paprika and sweet currants.  The smoky-sweet flavors of the couscous are ideal partners for the tangy chicken and piquant arugula.  We tie it all together with a spicy pimento dressing - add as much or as little as you like.
