Aged 120 Days...
There's a lot you could accomplish in 120 days. Train for a marathon. Write the great American novel. Make some cheese. Not surprisingly, here at Trader Joe's we've chosen that final option. And while some may say this was us taking the easy way out, we'll argue that making good cheese is both physically and mentally demanding, and that the end result of our endeavors is substantially more delicious than the other two options.
Trader Joe's Raw Milk Aged Cheddar is crafted for us by a 5th generation cheese making family in Northern Ohio's cheese country. In the U.S., raw milk cheeses must be aged at least 60 days—we've doubled that here. The result is a full-flavored Cheddar that's moderately sharp and showing ever-so-slight signs of becoming crumbly. It's a satisfying sandwich cheese and pairs well with sliced tomatoes and roasted peppers for an interesting take on a simple quesadilla. It's not just for sandwiches, though—cut it into cubes and serve with
fruit, like apples, pears or grapes.
