In a saucepan, heat soup over medium heat, about 5 minutes. Stir occasionally and turn to low once simmering. Meanwhile, drizzle about 1 tablespoon of olive oil into a large frying pan, then warm over medium heat. Add sausage pieces to the heated pan and spread evenly across the bottom of the pan. Allow large sausage pieces to brown a bit before breaking into smaller bits with a wooden spoon, about 3-5 minutes. Remove from heat. To serve, ladle the soup into individual bowls, then garnish with sausage, cheese and chives. Enjoy!
